Blueberry Oat Muffin
Recipe for 10 medium sized muffins
- 3/4 cup flour
- 1/3 cup instant oatmeal
- 1tsp baking powder
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 1/4 cup sugar
- 1 egg
- 56g unsalted butter. melted at room temp
- 1/4 cup milk
- 3/4 cup fresh blueberries
- 1/2 tsp vanilla
- 1/2 tbsp of choc chips
1. Preheat oven to 175 degrees (airfryer to 170 degrees).
2. Line muffin tin with baking cups.
3. In a bowl, whisk the flour, oats, baking powder, salt and cinnamon.
4. In another bowl, mix the sugar, egg, butter and milk.
5. Stir wet ingredients into the dry ingredients. fold in blueberries.
6. Scoop 1 ice cream scoop full of muffin batter into the muffin tray. Top it off with some sugar or white choc or choc chips.
7. Oven it at 175 degrees for 20mins / airfry at 170 degrees for 16mins till toothpick comes out clean and muffin top is golden brown.
8. Cool it down for 5mins before serving.
