Healthy Oatmeal Coconut Pandan Cake
Ingredients

- Oatmeal Flour 45g (may use food processer to grind the oatmeal)

- Coconut Flour 45g

- Baking Powder 3 tsp

- Monk Fruit Sweetener 60g (can be replaced with other sweeteners or sugar substitutes)

- Pandan Juice 120 ml

- Coconut Cream 120 ml

- Eggs 5

- Melted Butter 60 ml

Procedure

1. Preheat the oven at 180C.

2. Whisk all ingredients until smooth and creamy.

3. Pour batter into loaf pan.

4. Bake for 40 to 50 minutes.
