Oatty Fruity Tarts
Ingredients

- 75g Quaker instant oatmeal

- 200g All-purpose flour

- 125g Unsalted cold butter (cut into 2cm cubes)

- 130g (1 cup) Marigold low-fat Strawberry yoghurt

- Some fresh fruits of your choice (toppings for tarts)

Procedure

1. Use a non-stick pan, lightly brown the oats for about 10 minutes using medium heat on a stove. Stir frequently till fragrant.

2. Transfer to a blender and milled it to powder form.

3. Divide into 2 portions, 50g and 25g in separate bowls.

4. In a large mixing bowl, sieve and add all the flour, 50g powdered oats and all the cold butter.

5. Use rubbing-in method to combine all ingredients to breadcrumbs-like texture, then knead till a dough is formed. If the dough is too soft, cover with plastic wrap and refrigerate for 30 minutes.

6. Preheat oven to 160 deg C baking mode (top & bottom heat).

7. Portion out sufficient dough according to the size of metal tart shells used. Fill or 'lined' the shells evenly with dough.  

8. Place all filled tart shells into the preheated oven and bake for 20 to 25 minutes till tarts are lightly browned.

9. Take a medium sized bowl, add all the yoghurt then slowly fold in 25g powdered oats till well mixed. Cover and store in fridge.

10. Once the tart shells are ready and cooled down to room temperature, add the yoghurt-oat mixture into the tarts and top with fruits of your choice.



Note: No sugar is added in this recipe. For a sweeter taste, some honey can be added with the yoghurt-oat mixture.
