Banana Oat Cake

Ingredients
- Banana (mashed) 350-360g
- Egg (room temp) 2
- Vegetable oil 80g
- Milk 50g
- Brown sugar 90g
- Oatmeal 250g
- Baking powder 8g
- Baking soda 3g
- Roasted nuts 100g (crushed)
- Dried fruits 80g
Procedure
- Preheat the oven at 180°C
- In 8” pan, line the base and sides with parchment paper. Keep aside.
- In a large bowl, put in the mashed banana.
- Using a manual whisk the mashed banana and add in egg one by one.
- Add in brown sugar and stir.
- Add in vegetable oil and mixed well.
- Pour in milk.
- Add all dry ingredients in another bowl and mix well with a spoon.
- Add the dry ingredients into the liquid mixture and whisk for 10-15 seconds.
- Fold in roasted nuts and dried fruit and stir well.
- Now pour the batter into prepared pan and top it with cashew nuts and banana.
- Tap the pan gently on the surface to get rid of any bubbles.
- Bake it in a preheated oven for 55-60 minutes or until a toothpick inserted comes out clean.
