Banana Oat Cake
Ingredients
  • Banana (mashed)   350-360g
  • Egg (room temp)     2
  • Vegetable oil            80g
  • Milk                          50g
  • Brown sugar            90g
  • Oatmeal                   250g
  • Baking powder         8g
  • Baking soda             3g
  • Roasted nuts           100g (crushed)
  • Dried fruits               80g
Procedure
  1. Preheat the oven at 180°C

     
  2. In 8” pan, line the base and sides with parchment paper. Keep aside.

     
  3. In a large bowl, put in the mashed banana.

     
  4. Using a manual whisk the mashed banana and add in egg one by one.

     
  5. Add in brown sugar and stir.

     
  6. Add in vegetable oil and mixed well.

     
  7. Pour in milk.

     
  8. Add all dry ingredients in another bowl and mix well with a spoon. 

     
  9. Add the dry ingredients into the liquid mixture and whisk for 10-15 seconds.  

     
  10. Fold in roasted nuts and dried fruit and stir well. 

     
  11. Now pour the batter into prepared pan and top it with cashew nuts and banana. 

     
  12. Tap the pan gently on the surface to get rid of any bubbles. 

     
  13. Bake it in a preheated oven for 55-60 minutes or until a toothpick inserted comes out clean.
