Festive Oatmeal Pineapple Tarts

Ingredients
Filling:
- 500g pineapple jam
Pastry Dough:
- 120g Quaker instant oatmeal
- 150g cake flour
- 50g sugar
- 40g skim milk powder
- 200g salted butter
- 2 egg yolks
- Half teaspoon vanilla essence
Egg wash:
- 2 egg yolks
- 2 teaspoon water
- 2 teaspoon oil
Procedure
- Roll the pineapple jam into 10g balls
- Blend the instant oatmeal in a blender until it has the consistency of flour
- Sift and combine the cake flour, oatmeal flour, sugar and milk powder
- Cut the butter into small cubes and rub the butter cubes into flour mixture until it resembles coarse breadcrumbs
- Add the egg yolks and vanilla essence and mix together until it forms a soft and smooth dough
- Roll the dough into 15g balls
- Flatten a ball of dough and place the pineapple jam ball in the centre and seal into a ball
- Place on a baking tray and place in the chiller for 15 minutes
- Preheat oven to 150 degrees C
- Brush the balls with egg wash and bake for 25 minutes or until golden brown
- Let cool on tray for 8 minutes and then transfer to wire rack to cool completely
