Grandma's Oatmeal Pound Cake

Ingredients
- Quaker Instant Oatmeal - 200 grams (to be blended)
- Quaker Instant Oatmeal - 20 grams (to sprinkle on cakes)
- Cake Flour - 30 grams
- Almond Flour - 70 grams
- 2 teaspoon Baking Powder
- Unsalted Butter (Soften at room temperature) - 300 grams
- Icing Sugar - 200 grams
- Eggs - 300 grams
- 1tsp Vanilla Extract
Procedure
1) Preheat oven at 160 degree celsius.
2) Use a food processor with paddle attachment, blend instant oatmeal, cake flour and almond flour.
3) Add baking powder and icing sugar, continue to blend into fine oatmeal flour mixture.
4) Add soften unsalted butter, eggs and vanilla extract. Blend for 2 minutes till all combined.
5) Scoop in a non stick baking mould lined with baking paper. Can make 2 cakes of 7" x 4" .
6) Sprinkle 20 grams of instant oatmeal on top of the cakes.
7) Bake at 160 degree celsius for 45 to 50 minutes till a toothpick poked in the centres comes out clean.
8) Allow cakes to cool on a rack for 30 minutes. Slice and Serve!
