Healthy Pandan Oatmeal Cookies
• Butter 100g (unsalted and softened)
• Stevia 120g
• Brown sugar 50g
• sea salt 1tsb
• 1 Egg
• 1 Egg yolk
• Pandan leaf extract 2 tsp
• Quaker Oatmeal 280g
• Baking powder 1 tsp
• Bicarbonate of soda 0.5tsp
1. Mix the butter, stevia and brown sugar in a blender.
2. Scrape down the sides of the bowl and beating with the egg, yolk and pandan .
3. Blend the oatmeal into the blender.
4. Mix the oatmeal flour with baking powder, bicarb and sea salt.
5. Stir the flour into the wet ingredients. Can add some milk if the dough too hard.
6. Scoop and roll balls of the cookie dough and put into fridge for 30 minutes.
7. Preheat the oven at 160°c.
8. Bake for 10-15 minutes until cookies have a crackled top or until slightly golden brown around the edges.
9. Remove from the oven and immediately transfer them to a wire rack to cool completely.
