Lemon Garlic Shrimp Oats

Ingredients
- 3/4 cup whole rolled oats
- 2 cloves of garlic
- 1 tablespoon butter
- 1/2 tablespoon lemon juice
- 5 shrimps deveined
- 2 stalks of parsley
- zest of 1/4 lemon
- 2 tablespoon white wine (optional)
- 1 cup water or seafood stock
- salt and pepper to taste
Procedure
- Mince garlic and chop up fresh parsley
- Melt butter in pan and stir fry garlic. Add shrimps and cook till 3/4 cooked, season shrimps with salt and pepper. Set aside
- Deglaze pan with water or seafood stock and add in rolled oats - simmer for 5 to 7 minutes depending on preference of oats
- (optional) Add in white wine and simmer for another 30s
- Turn off heat and stir in parsley, lemon juice and lemon zest. Season with salt and pepper according to taste.
- Plate with shrimps and lemon slices - ready to serve
