Lemon Garlic Shrimp Oats

Lemon Garlic Shrimp Oats
Ingredients
  • 3/4 cup whole rolled oats
  • 2 cloves of garlic
  • 1 tablespoon butter
  • 1/2 tablespoon lemon juice
  • 5 shrimps deveined
  • 2 stalks of parsley
  • zest of 1/4 lemon
  • 2 tablespoon white wine (optional)
  • 1 cup water or seafood stock
  • salt and pepper to taste
Procedure
  1. Mince garlic and chop up fresh parsley

     
  2. Melt butter in pan and stir fry garlic. Add shrimps and cook till 3/4 cooked, season shrimps with salt and pepper. Set aside

     
  3. Deglaze pan with water or seafood stock and add in rolled oats - simmer for 5 to 7 minutes depending on preference of oats

     
  4. (optional) Add in white wine and simmer for another 30s

     
  5. Turn off heat and stir in parsley, lemon juice and lemon zest. Season with salt and pepper according to taste. 

     
  6. Plate with shrimps and lemon slices - ready to serve
