Ocean Oaty Basmati Rice

Ingredients
- 2 cups of Basmati Rice
- 4 Tbsp of Quaker instant oat
- 2.5 cups water
- 2 Tbsp olive oil
- 1 yellow onion onion, chopped
- 2 cloves garlic, minced
- 2 tomato ?, diced
- Half green capsicum ?, seeded and sliced
- 1 Tsp paprika
- 1 Tsp turmeric powder
- 1 Tsp curry powder
- 1 Tsp salt
- 6 pcs scallops
- 6 pcs mussels
- 6 pcs prawns ?
- Lemon ?, cut into wedges
- Parsley ?, chopped
Procedure
- Heat up olive oil in a large skillet and add in garlic, onion tomato
- Stir in Paprika, Turmeric, curry powder and salt
- Add Basmati Rice in and make sure the rice is coated evenly
- Add in water and Quaker instant oat
- Cover the skillet and bring to boil
- Cook the oat rice on low heat for around 15mins
- Stir occasionally till the rice is tender
- Lay capsicum, scallops , mussels and prawns on top of the rice and cook for another 15mins
- Use butter to pan fried some Quaker oat for the rice topping
- Serve the seafood Oaty rice with lemon wedges and some parsley
Seafood and healthy Quaker oat provide natural sources of vitamins and minerals, this will be a Healthy Quaker Oaty-licious meal during festive gathering.
