Tahini & Oat Banana Bread (Gluten & Refined Sugar-Free)

Ingredients
- 3 large overripe bananas
- 2 eggs
- 1/3 cup tahini (replaceable with oil or nut butter of choice)
- 1/2 cup plain yogurt
- 1 tsp vanilla extract
- 1/2 cup coconut sugar (any granulated sugar)
- 1 cup Quaker oats (ground)
- 1/2 cup ground almonds
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon (optional)
Procedure
- Preheat the oven to 180 degree celcius. Blend oats into a fine flour.
- In a large bowl, mash overripe bananas.
- Add eggs, tahini, plain yogurt vanilla extract, & coconut sugar — whisk liquid ingredients till homogenous.
- In the same bowl, add oat & almond flour, baking soda, salt and cinnamon — whisk together till just combined.
- Pour into a lined/greased baking pan, top with topping of your choice. (I used banana coins & dried cranberries)
- Bake for 35-45 minutes or until a skewer inserted into the centre comes out clean.
- Cool, slice and enjoy with a cup of tea or coffee! :)
