Tahini & Oat Banana Bread (Gluten & Refined Sugar-Free)
Ingredients
  • 3 large overripe bananas 
  • 2 eggs
  • 1/3 cup tahini (replaceable with oil or nut butter of choice)  
  • 1/2 cup plain yogurt 
  • 1 tsp vanilla extract 
  • 1/2 cup coconut sugar (any granulated sugar)
  • 1 cup Quaker oats (ground) 
  • 1/2 cup ground almonds
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon (optional)
Procedure
  1. Preheat the oven to 180 degree celcius. Blend oats into a fine flour. 

     
  2. In a large bowl, mash overripe bananas. 

     
  3. Add eggs, tahini, plain yogurt vanilla extract, & coconut sugar — whisk liquid ingredients till homogenous.

     
  4. In the same bowl, add oat & almond flour, baking soda, salt and cinnamon — whisk together till just combined. 

     
  5. Pour into a lined/greased baking pan, top with topping of your choice. (I used banana coins & dried cranberries)

     
  6. Bake for 35-45 minutes or until a skewer inserted into the centre comes out clean.

     
  7. Cool, slice and enjoy with a cup of tea or coffee! :)
