Cinnamon Roll Oats Mug Cake

Ingredients

- 8 tbsp Quaker® Instant or Quick Cook Oats

- 1/2 tsp baking powder

- 1/8 tsp fine sea salt

- 1/4 tsp ground cinnamon

- 1/4 cup soymilk or almond milk

- 1 tbsp MCT oil or Extra Virgin Coconut Oil

- 1/2 tsp vanilla extract

- 1 tbsp honey (vegan option: coco/agave nectar)

- 1/2 tbsp raisins

TOPPING:

- 1/4 tsp ground cinnamon

- 1 tbsp Muscovado or coco sugar

Procedure

1. In a small bowl, mix nutmilk, vanilla and coco oil. Set aside.

2. In a microwaveable mug, mix oats, baking powder, 1/8 tsp ground cinnamon and salt. Stir in the nutmilk mixture. Mix well.

3. Whisk the honey and raisins into the batter.

4. Prepare the topping. In a separate bowl, mix sugar and cinnamon. Use the tip of a knife to swirl sugar-cinnamon mix into the batter.

5. Microwave on high between 1 min and 45 seconds to 2 minutes. Let cool and transfer muffin on a plate. Serve warm.
