Oat Burrito Bowl
TexMex Oats
- 8 tbsp Quaker® Rolled Oats
- 1/4 tsp cumin
- 1/4 tsp paprika or chill powder (optional)
- 1/8 tsp fine sea salt
- 1/2 cup hot water Mexican Beef
- 1/2 cup lean ground beef
- 1/16 tsp cumin
- 1/16 tsp salt
- 1/16 tsp ground black pepper DIY Salsa
- 3 tbsp tomato, seeded and chopped
- 1/2 tbsp red onion, chopped
- 1/2 tbsp cilantro, chopped
- 1 tsp lemon juice
- 1/2 tbsp olive oil
- 1/16 salt
- 1/16 cumin
- 1/4 cup red kidney beans (cooked or canned)
- 1 tbsp carabao yogurt or sour cream
1. Prepare TexMex oats. In a microwave safe container, mix oats with spices. Pour hot water and microwave on high for 2 minutes. Set aside.
2. Prepare Mexican beef. Season beef with spices in a microwave safe container. Microwave on high for 1 minute and 30 seconds to 2 minutes. Set aside.
3. Prepare DIY salsa. Whisk together lemon juice, olive oil, salt and cumin. Toss in tomatoes, red onion and cilantro. Allow to sit for 2-3 minutes for flavors to blend.
4. Assemble the burrito bowl. Spread TexMex oats evenly in a bowl. Arrange toppings. Fill it with meat, salsa and beans.
5. Top with yogurt or sour cream. Serve.
