"Onde-Onde" Oatmeal Cookies
-130g Flour
- 20g Desiccated coconut
- 20g Coconut milk powder
- 130g Quaker Instant Oatmeal
- 1/2 tsp Baking soda
- 1/4 tsp Salt
- 125g Margarine
- 30g Brown Sugar
- 50g Grated palm sugar (gula melaka)
- 60ml Canola oil -
1 tsp Pandan extract
1. Preheat the oven to 180°C.
2. Line two large baking trays with parchment paper.
3. In a bowl, combine the flour, desiccated coconut, coconut milk powder, oatmeal, baking soda, and salt. Set aside.
4. In another bowl, cream the margarine, brown sugar, palm sugar, oil and pandan extract with an electric mixer.
5. At low speed, add the dry ingredients, a little at a time.
6. Shape dough into little balls. You may also sprinkle grated gula melaka and desiccated coconut on top as garnishing.
7. Bake for about 12 minutes or until lightly browned.
8. Let cool on a wire rack. Serve warm or cold.
