Quaker Oat Croquettes
- ½ cup of Quaker Instant or Quick Cook Oats
- 3 teaspoons of unsaturated cooking oil
- 3 cloves of garlic, finely chopped
- 1 red chilli, finely chopped
- 1 large bunch of spinach, washed and finely chopped
- 1 cup of low-fat or non-fat milk
- ½ teaspoon of salt
- ¼ teaspoon of black pepper powder
Optional
- Goat cheese, brie (to add into the mixture)
- Guacamole, avocado & yoghurt dip
1. Preheat the oven to 180°C (350°F).
2. In a non-stick pan, heat the oil and stir-fry the garlic and chillies until the garlic browns slightly.
3. Add in the spinach and continue stirring on high heat for about 1–2 minutes.
4. Cover the pan and cook the spinach to a simmer, until it softens and is cooked.
5. Add in the oats, milk, salt and pepper and stir continuously until the mixture becomes really thick and leaves the sides of the pan.
6. Remove from the heat and let the mixture cool.
7. Shape the mixture into croquettes and grill in the oven for about 20 minutes, flipping them once during cooking.
8. Serve hot with chilli sauce.
