Southwest Oats Salad

Ingredients

- 8 tbsp Quaker® Rolled Oats

- 3/4 cup hot water

- 1/8 tsp fine sea salt

- 2 tbsp whole kernel corn

- 2 tbsp red onions, chopped

- 1 tbsp red bell pepper, chopped

- 1/4 cup black beans, cooked

- 1 tbsp carabao cheese or feta cheese, chopped

- 2 tbsp chopped cilantro

Dressing:

- 1/2 tbsp lemon juice

- 1/2 tbsp honey -

-1 tbsp olive oil

- 1/4 tsp cumin

- 1/8 tsp salt

Procedure

1. Cook the oats in 3/4 cup hot water with 1/8 tsp salt according to package directions. After cooking, set aside to cool. Add corn, red onions, pimiento, beans, cheese, and cilantro.

2. Prepare the dressing. Whisk the lemon juice, honey, olive oil, cumin, and salt together in a small bowl. Pour over the oat mix and stir gently to coat.

3. Serve cold or at room temperature.
