Chocoatnana Muffin
- 150g Instant Quaker Oats
- 120g Sugar
- 30g Melted Butter
- 2/3 tsp Baking Powder
- 1/4 Salt
- 2/3 tsp vanilla extract
- 1 Large egg
- 2 Very Ripe banana
1. Mash bananas in a large mixing bowl, then add egg, sugar, butter and vanilla extract. Stir well to combine.
2. Use a food processor and blend Oats for 3-4 minutes until it becomes fine. Sift it to remove clumps.
3. Mix oat flour, baking powder and salt in a separate bowl until combined.
4. Fold the dry ingredients with the wet ingredients until no more dry ingredients can be seen.
5. Divide the mixture evenly into muffin cases (silicone or paper) and carefully place into the air fryer basket.
6. Slide the basket into the air fryer and bake for 15 minutes at 180C or until muffins are golden and a skewer comes out clean.
7. Move to a wire rack and allow the muffins to cool in the cases.
