Ingredients
SMOOTHIE:
- 1 cup mixed tropical fruit fresh or frozen. I used dragon fruit, banana, and kiwi
- Large handful spinach
- 1 cup coconut water
OATMEAL:
- ½ cup oats
- 1 mashed banana
- 1 Tbsp chia seeds
- ½ cup vanilla vegan yogurt
- ⅔ cup light coconut milk
TOPPINGS:
Kiwi, blueberries, dragon fruit and almonds
Procedure
1. In a blender whiz up smoothie ingredients and set aside.
2. In a bowl mash banana and add in all other oatmeal ingredients and mix well to combine.
3. Allow to sit for a few minutes for the oats to absorb the liquid or you can leave in the fridge overnight.
4. Add half the oatmeal mixture in one bowl and gather up to one side. Pour the smoothie on the other side of the bowl.
5. Top with your favorite toppings and enjoy!
