Oat Fried Prawns
Ingredients

- 1 cup Quaker Oat

- 1 tbsp brown sugar

- 3 tbsp unsalted butter, melted

- 1 tsp salt

- 1 tbsp milk powder

- 500 gram (around 12) Prawns

- 1 tsp salt

- 1 tsp lime juice

- 1 egg

- 3 tbsp cornstarch

- A handful of fresh curry leaves

- 1 red chilli, thinly sliced and seeded

Procedure

1. Preheat oven to 180 Celsius. Mix together oat with melted butter and brown sugar. Spread evenly on a baking sheet, and bake for 10 minutes, stirring at 5 minutes mark. Once cool enough, mix with salt and milk powder. Set aside.  

2. Mix together prawns with lime juice and salt. Marinade for 10 minutes. Then add in egg and corn starch, mix well.  

3. Heat a pot of oil for deep frying. Once the oil is hot, pan-fry the prawns for 30 seconds each side, just until the prawns turn pink. Pat dry with paper towels to remove excess oil.  

4. Heat some butter over medium heat in a wok/frying pan until foamy. Add curry leaves and chillies, fry until the leaves look crispy.  

5. Reduce heat to medium-low. Add the oat topping, mix well. Add the deep-fried prawns, stir to coat.  

6. Remove from heat immediately and serve.
