Oat-y Carrot Cupcake

Ingredients
- 40g instant oatmeal
- 40g plain flour
- Pinch of salt
- 3/8 tspn cinnamon powder
- 1/2 tspn baking soda
- 50ml canola oil
- 15g honey
- 15g brown sugar
- 1 large egg
- 75g carrot, grated
- 25g walnut, coarsely chopped
Procedure
1. Preheat oven at 180°c and prepare 4 cupcake liners
2. In a bowl, mix instant oatmeal, plain flour, salt, cinnamon powder and baking soda
3. In a separate bowl, whisk oil, honey and brown sugar. Add in egg and whisk till combine
4. Stir in dry ingredients in small portions (around 3 - 4 parts) till the batter is smooth
5. Stir in carrot and walnut
6. Fill each cupcake liner with batter till 3/4 full and bake for 25 mins
7. Cool the cupcakes before serve
