Oats' n Cheese (A healthier riff on Mac n Cheese)
- 6 tablespoons of Quaker Quick Cook Oatmeal
- 270g unsweetened soya milk, or cow's milk
- 1 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- 20g edamame beans
- 30g carrot, diced
- 20g shredded cooked chicken (omit if vegetarian)
- 1/4 tsp Himalayan pink salt
- 50g shredded cheese
- 1/2 tablespoon parmesan powder
- A few cracks of black pepper, according to taste (optional)
Topping (optional, but recommended!)
- 1/2 tablespoon parmesan powder
- 1 and 1/2 tablespoon breadcrumbs
- Pinch of chilli flakes, if desired
Serves 1
1. In a pot, mix Quaker Quick Cook Oatmeal, soya milk, garlic powder and smoked paprika together, and bring to a boil.
2. Add edamame beans, carrots and shredded chicken. Cook till mixture thickens, about 2-3 minutes.
3. Remove from heat. Add salt, shredded cheese, parmesan powder and black pepper (if using), and mix until shredded cheese is melted.
4. Transfer into an oven-proof bowl or ramekin.
5. For the topping, mix parmesan powder, breadcrumbs and chilli flakes. Top the Oats' n Cheese generously with the mixture.
6. Set oven to broiler setting, and broil until topping is golden brown.
