Crispy 100% Oat Waffles

Ingredients
This is an easy & healthy one-bowl recipe that yields light and crispy Belgium-style waffles. Enjoy for breakfast, tea time or dinner!
Yield: About 4 medium waffles
- 45g milk
- 45g plain yogurt
- 20g (2tbsp) coconut oil or melted butter
- 1 egg
- 1 tbsp honey/maple syrup (optional)
- 1 tsp vanilla extract
- 65g ground Quaker oats
- 1 tsp baking powder
- 1/4 tsp salt
Caramelised Banana Topping
- 2 small/1 large banana
- Cinnamon
Procedure
- Whisk milk, yogurt, oil, egg, honey (if using), and vanilla extract.
*Note, you can use 90g of milk if you don’t want to use yogurt!
- Add ground oats (simply Quaker Oats blended into a flour), baking powder and salt to the liquids. Whisk just to combine.
- Let the batter rest for 5-10 mins to allow the oats to absorb the moisture and thicken slightly.
- Cook waffles in a waffle iron. Let cool on cooling rack as the rest of the waffles cook.
- Topping suggestion: In the mean time, slice bananas into coins and pan-fry on low heat with cinnamon until soften and sizzling slightly.
- Serve waffles warm with maple syrup, caramelised bananas and whatever fruit you’d like!
