Easy Sugar free Soft Baked Quaker Oat Flour Chocolate Chips Cookies

Ingredients
Makes 12 large cookies
-180g unsalted butter (softened at rm temperature
-150g xylitol sweetener
-1tsp vanilla essence
-50g beaten egg (rm temperature)
-240g oat flour (blend Quaker instant oatmeal/ rolled oat for about 5 min using food processor or blender till finely ground)
-1tsp baking powder
-1/2tsp salt
-200g sugar free chocolate chips
Procedure
- Preheat oven at 180 degree celsius.
- Using a wooden spoon, cream butter and sugar till light and fluffy. Next add in the vanilla essence and beat till combined. Then add the beaten egg, bit by bit into the mixture and mix well after each addition.
- After that, mix the oat flour, salt and baking powder together, add into the mixture and mix until combined. Add the sugar free chocolate chip last and blend well into the mixture without over mixing.
- Scoop the soft dough onto baking paper 3-4cm apart and baked at 190 degree celsius for 15-18 min till edges are light brown and set in the center.
