French tOATst Sandwiches (Vegan & refined sugar free!)

Ingredients
for the oat toast:
- 80 g blended oats
- 20 g vanilla protein powder
- 1 tbsp maple syrup
- half mashed banana
- 30 ml oat milk
“egg” mixture:
- 100 ml oat milk
- flax egg (1 tbsp flax seeds + 3 tbsp water)
- 1/2 tbsp cinnamon
- 1/2 tsp vanilla extract
Filling:
- 30 g peanut butter (I used chocolate pb!)
- sliced banana
Procedure
- Combine your flax egg and set aside.
- Combine the ingredients for the toasts and separate into 6 flat circles.
- Bake at 180c for 10 to 15 minutes until slightly golden-brown.
- Whisk the milk with the flax egg, cinnamon and vanilla.
- Spread the pb on top of the toasts, add banana slices and top with another toast slice (like you would do with a sandwich).
- Carefully drop the sandwiches into the runny mixture (using a fork) and fry everything in a pan with coconut oil on medium heat.
