French tOATst Sandwiches (Vegan & refined sugar free!)
Ingredients

for the oat toast:

  • 80 g blended oats
  • 20 g vanilla protein powder
  • 1 tbsp maple syrup 
  • half mashed banana
  • 30 ml oat milk



“egg” mixture:

  • 100 ml oat milk
  • flax egg (1 tbsp flax seeds + 3 tbsp water)
  • 1/2 tbsp cinnamon
  • 1/2 tsp vanilla extract



Filling:

  • 30 g peanut butter (I used chocolate pb!)
  • sliced banana
Procedure
  1. Combine your flax egg and set aside.
  2. Combine the ingredients for the toasts and separate into 6 flat circles.
  3. Bake at 180c for 10 to 15 minutes until slightly golden-brown.
  4. Whisk the milk with the flax egg, cinnamon and vanilla. 
  5. Spread the pb on top of the toasts, add banana slices and top with another toast slice (like you would do with a sandwich).
  6. Carefully drop the sandwiches into the runny mixture (using a fork) and fry everything in a pan with coconut oil on medium heat.
