Healthy oatmeal brownie
Ingredients
  • 1 1/2 – 2 cups Quaker oatmeal (finely blend)
  • 3/4 tsp baking soda
  • ½ tsp espresso powder
  • 3/4 cup unsalted butter
  • 1 1/2 cups sugar
  • 1 cup cocoa powder
  • 1 tsp kosher salt
  • 1 Tbsp vanilla extract
  • 3 large eggs
  • 1 1/4 cup chocolate chips
Procedure
  1. Preheat the oven to 180deg C and lightly grease an 8×8″ pan.

     
  2. Combine oat flour with the baking soda and espresso powder. Set aside.

     
  3. In a saucepan over medium-low heat, melt the butter.

     
  4. Once melted, add the sugar and cook for another minute.

     
  5. Remove from heat and add the cocoa and salt. Stir to combine.

     
  6. Add the vanilla, and then the eggs one at a time.

     
  7. Add dry ingredients to the wet ingredients, mixing until just combined.

     
  8. Stir in the chocolate chips.

     
  9. Spread the mixture into the prepared pan and bake for 30-35 minutes.

     
  10. Let cool 20 minutes before cutting and serving.
