Healthy Oatmeal Kimchi Pancake

Ingredients
- 200g cabbage kimchi, cut into small pieces
- 1 tablespoon of kimchi juice
- 2 stalks of spring onions, chopped finely
- Half teaspoon of sugar
- Quarter cup all purpose flour
- Quarter cup Quaker instant oatmeal
- Half cup water
Procedure
- Blend the instant oatmeal in a blender into a fine flour
- Combine the kimchi, kimchi juice, spring onions, all purpose flour, oatmeal flour, water and sugar and mix well to form the pancake batter
- Heat a non-stick pan over medium-high heat and add a thin layer of cooking oil
- Pour half the batter into the middle of the pan and spread it out
- Flip after 4 minutes or when brown, adding another thin layer of oil before flipping
- Cook the other side for another 4 minutes or until brown
