Homemade Linguine Aglio Oatlio

Ingredients
For dough:
- 100g Quaker instant oatmeal
- 100g all purpose flour
- 2 eggs
- 2 tablespoons extra virgin olive oil
For pasta:
- 6 tablespoons extra virgin olive oil
- 10 cloves of garlic, finely sliced
- Salt and pepper for seasoning
- Parmesan cheese for topping (optional)
Procedure
- Add the instant oatmeal into a blender and blend until it has the consistency of flour
- Combine the oatmeal flour and all purpose flour and create a mound on the work surface with a well in the middle
- Add eggs and olive oil to the well and slowly incorporate, forming a rough dough
- Knead the dough until a smooth dough
- Set the dough aside in a bowl and cover for 30 minutes
- Roll the dough flat using a rolling pin and feed it through a pasta machine set for linguine
- Cook pasta in boiling salted water for 4 minutes
- Drain and set aside
- To a saucepan, add olive oil and garlic and cook at low heat for 3 minutes
- Add drained pasta and toss, adding pasta water as necessary if too dry
- Season with salt and pepper and top with grated parmesan cheese
