(no banana) choc-chip oat cookies
Ingredients
  • 2.5 cups oats
  • 1 cup butter
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1.5 cup semisweet chocolate chips
  • 1 cup chopped walnuts/pecans (optional)

 

Procedure

1. Preheat the oven to 150 degrees celcius

2. You may choose to blend the oats to oat flour in a food processor/blender or leave unblended for texture.

3. In a mixing bowl, add butter, brown sugar and white sugar. 

4. Add two eggs, one at the time, then add vanilla extract.

5. Add the flour, salt, baking powder, and then (blended/unblended) oats, and mixed until combined.

6. Add the chocolate chips and nuts (optional), mixing till combined.

7. Shape 2-3 tablespoons of dough into mounds, slightly apart on a baking sheet. (ProTip: Use an ice-cream scoop for easy shaping!)

8. Bake the cookies for about 15 minutes, or until the tops are golden brown.
