Soft & Fluffy Oatmeal Peanut Butter Dorayaki

Ingredients
- 2 eggs
- 100g caster sugar
- 1.5 tablespoons honey
- 1 tablespoon oil(I used canola)
- 1 tablespoon mirin
- 1/3 teaspoon baking soda
- 30g Quick Cook Oatmeal(Blended to fine)
- 150g plain flour(sifted with grounded quickcook oatmeal)
- 60ml water
- Peanut Butter
Procedure
1. Beat the eggs with whisk and add the sugar. Mix until the mixture whitens.
2. Add the honey and mix till incorporated.
3. Add oil and mix.
4. Add baking soda and mix.
5. Add in mirin and mix.
6. Fold in sifted flour till well mixed and add in water. Pour batter into measuring cup with spout or piping bag.
7. Preheat ur nonstick pan over low heat, pour batter in and cover pan. Once u see bubbles stop moving, flip the other side and cook for a while then remove and leave to cool on cooling rack before filling with peanut butter.
