Oatmeal Chocolate & Hazelnut Cookies

Ingredients
- 3 cups Quaker instant oatmeal
- 1.5 cups all purpose flour
- 200g unsalted butter at room temperature
- 2 eggs
- 1 cup brown sugar
- Half cup white sugar
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Half teaspoon sea salt
- 1 cup semi sweet chocolate chips
- 1 cup hazelnuts
Procedure
- Blend the instant oatmeal in a blender until it has the consistency of flour
- Beat butter and sugars until creamy, then add eggs and vanilla extract and mix together
- Add oatmeal and all purpose flour, baking soda and salt into mixture and mix well
- Drop 1 heap tablespoon of cookie dough mixture onto a baking tray with baking sheet and add 3 to 5 chocolate chips and hazelnuts to each cookie
- Bake in 180 degrees C oven for 11 minutes
- Cool for 2 minutes on baking tray and transfer to wire rack to cool completely
