Oatmeal Chocolate & Hazelnut Cookies
Ingredients
  • 3 cups Quaker instant oatmeal
  • 1.5 cups all purpose flour
  • 200g unsalted butter at room temperature
  • 2 eggs
  • 1 cup brown sugar
  • Half cup white sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Half teaspoon sea salt
  • 1 cup semi sweet chocolate chips
  • 1 cup hazelnuts
Procedure
  1. Blend the instant oatmeal in a blender until it has the consistency of flour
  2. Beat butter and sugars until creamy, then add eggs and vanilla extract and mix together
  3. Add oatmeal and all purpose flour, baking soda and salt into mixture and mix well
  4. Drop 1 heap tablespoon of cookie dough mixture onto a baking tray with baking sheet and add 3 to 5 chocolate chips and hazelnuts to each cookie
  5. Bake in 180 degrees C oven for 11 minutes
  6. Cool for 2 minutes on baking tray and transfer to wire rack to cool completely
