Sweet Potato Oat Fritters
Ingredients
  • 150G Grated skinned purple sweet potato
  • 2 Eggs
  • 1 cup Plain flour
  • 1/3 cup Quaker rolled oats
  • 1 cup + ½ cup Natural yoghurt (1/2 cup yoghurt for serving)
  • 2 Tbsp Brown sugar
  • 1 tsp Baking powder
  • 1/2 tsp Vanillin powder
  • 1/2 tsp Salt
  • Some oil Sunflower oil (for light pan frying)

 

Procedure
  1. Grate skinned purple sweet potato (set aside).
  2. Sieve into medium-sized bowl - flour, baking powder, vanillin powder and salt.
  3. Add to dry mixture above, grated purple sweet potato, rolled oats and brown sugar.  Mix well.
  4. Make a well in the centre of the mixture, add two eggs.  
  5. Add 1 cup natural yoghurt to egg mixture above. Stir well with a fork.
  6. Spoon mixture in small batches into warm flat pan with oil.
  7. Flip fritter over and lightly pan fry till golden brown.
  8. Fritters can be served with natural yoghurt.  Makes 12 fritters.
