Tonijiru Inspired Oats with Mackerel and Broccoli

Ingredients
- 6 tbsp Rolled oats
- 1/4 Raddish sliced
- 1/3 Carrots sliced
- 1/4 Gobo (Burdock Root) sliced
- 1/2 tsp Ginger (thinly sliced and julienne)
- 2.5 tbsp Soy sauce
- 2 tbsp Mirin
- 1.5 tbsp Sake
- 0.5 tbsp Dashi powder
- 170ml Water
- 4-5 florrets of Broccoli
- 1 side of Mackerel fillet
- Pinch of Salt
- Pinch of Pepper
- 1 tbsp shredded Seaweed
- 1/2 tsp White Sesame seeds
Procedure
- Slice carrot, radish and burdock root into even slices.
- Toast oats until golden brown.
- Fry chopped ginger, carrots, radish and burdock root in a pot with 1/2 tablespoon of sesame oil. Once fragrant, add in soy sauce, mirin, sake, dashi powder and water. Bring mixture to a boil.
- When mixture is boiling, add in broccoli and let it cook for 2 minutes. Once cooked, remove broccoli only and set aside.
- Add oats into boiling mixture while stirring consistently. Let cook for 4-5 minutes, until no moisture is left.
- Pat dry mackerel fillet, season with salt and pepper and cook in a smoking hot pan with oil for 2 minutes on each side.
- Once both mackerel and oats are cooked, plate the dish like the photo above.
- Garnish with seaweed and sesame seed.
