Tonijiru Inspired Oats with Mackerel and Broccoli
Ingredients
  • 6 tbsp Rolled oats
  • 1/4 Raddish sliced
  • 1/3 Carrots sliced
  • 1/4 Gobo (Burdock Root) sliced
  • 1/2 tsp Ginger (thinly sliced and julienne)
  • 2.5 tbsp Soy sauce
  • 2 tbsp Mirin
  • 1.5 tbsp Sake
  • 0.5 tbsp Dashi powder
  • 170ml Water
  • 4-5 florrets of Broccoli
  • 1 side of Mackerel fillet
  • Pinch of Salt 
  • Pinch of Pepper
  • 1 tbsp shredded Seaweed 
  • 1/2 tsp White Sesame seeds
Procedure
  1. Slice carrot, radish and burdock root into even slices.

     
  2. Toast oats until golden brown.

     
  3. Fry chopped ginger, carrots, radish and burdock root in a pot with 1/2 tablespoon of sesame oil. Once fragrant, add in soy sauce, mirin, sake, dashi powder and water. Bring mixture to a boil.

     
  4. When mixture is boiling, add in broccoli and let it cook for 2 minutes. Once cooked, remove broccoli only and set aside.

     
  5. Add oats into boiling mixture while stirring consistently. Let cook for 4-5 minutes, until no moisture is left.

     
  6. Pat dry mackerel fillet, season with salt and pepper and cook in a smoking hot pan with oil for 2 minutes on each side.

     
  7. Once both mackerel and oats are cooked, plate the dish like the photo above.

     
  8. Garnish with seaweed and sesame seed.
