Vegeterian Breakfast Salsa And Egg Oats Bowl

Ingredients
- 100g cherry tomatoes
- 1 stalk of parsley
- 1.5 tsp black pepper
- 1/3 diced red onion
- 1/2 lemon/ lime (juice)
- Pinch of salt
- 1 tsp sugar
- 6 tbsp rolled oats
- 180g chicken stock
- 1 egg
- Spring onion for garnish
Procedure
- Cut cherry tomatoes into halves, chop parsley and mix with black pepper, red onion, lime juice, salt and sugar. Set aside in the fridge and let it marinate.
- Boil chicken stock and put oats into it. Cook for 5 minutes.
- Fry a sunny-side up egg in a medium heat non-stick pan and season with black pepper.
- Place oats into a bowl and lay the egg on top. Followed by chilled salsa.
- Garnish with spring onion on the egg.
