Amazing Banana Bread
Dry:
- 1½ cups (213g) all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon baking soda
- ¾ cup (64g) Quaker oats (quick-cooking)
- ⅔ cup (142g) sugar
- 2 teaspoons cinnamon
- 1 teaspoon salt
Wet:
- 2 large eggs
- ⅓ cup (71ml) milk
- ¼ cup (57ml) flavourless oil (canola, vegetable, sunflower oil)
- 1½ teaspoons vanilla extract
- 3 medium bananas, mashed
1. Preheat your oven to 180°C.
2. Prepare a 9x5 loaf pan and line with baking paper.
3. In a bowl, sieve and combine the dry ingredients (flour, baking soda, baking powder, oats, sugar, cinnamon, and salt)
4. In a second bowl, combine the wet ingredients (eggs, milk, oil, vanilla, and mashed bananas)
5. Bring the dry ingredients into the bowl with the wet ingredients and mix by hand just until combined. *** Do not overmix as this can toughen the dough.
6. Pour the batter into the loaf pan. Bake for 55 minutes or until a toothpick comes out clean.
Notes: You may store at room temperature in an air tight container for up to 3 days.
