Chicken Oat Porridge
Ingredients

Recipe for 1 pax:

- 10 tablespoon of instant oatmeal

- 700 ml water

- 300 g of chicken breast meat or 1 drumstick

- 1 piece of fish cake

- 1/2 can of braised can peanut

- 1 stalk of Coriander

- Soya sauce

- 1 Chili (big or padi, depending on your preference)

- Pepper

- Sesame oil

- 1 Egg

Marinate for Chicken:

- 1 teaspoon of Sesame oil

- 1/2 teaspoon of Soya sauce

Procedure

Preparatory work:

1. Cut the Chili for (a) garnish and (b) dip

2. Finely cut the Coriander leave for garnish

3. Open a can of braised peanuts and take out 1/2 of it

4. Boil the chicken breast/drum for 20 mins and take out to leave it too cool for 1/2 hr before separating the meat into small strips. Put your chicken into a bowl and marinate your chicken

5. Slice the fishcake into small strips

How to cook the onsen egg :

6. Heat up the pot until boiling

7. Add the egg in and let it be in there for 7 mins (do not close the lid)

8. After 7 mins, remove the egg and put it immediately into a container with ice and water for 5 mins

9. After 5 mins, you may remove egg and peel the shell slowly and with care

10. Once egg is deshelled, slice the egg into 2 halves.

Cooking:

11. Using a large bowl or claypot, scoop 10 table spoons of oatmeal

12: Boil the water and pour it into the bowl/claypot with the instant oatmeal prepared in step 1 (Note : water must be hot and just boiled & add less or more water according to your preference on how you like your porridge to be)

13: Stir the oatmeal thoroughly as you pour the hot water in slowly. Stop only after you have reached a consistent paste

14: Add 1-2 teaspoons of soya sauce to taste (You can add more or less depending on your taste bud)

15: Your porridge is now ready. What is left is garnishing and toppings

16: Put you Chicken, Fishcake & Peanuts. Top up with cut chili and Coriander. Add pepper of you want a peppery taste to your oatmeal porridge. YOUR PORRIDGE IS NOW READY TO EAT

Remarks :

- This recipe is a very easy and quick cooking way of getting your lunch/ dinner ready

- The chicken/fishcake/chili/egg can all be done the day before or in the morning

- if all the ingredients are prepared in advance, you get your meal ready for your family in just 10 mins

It is very delicious and highly addictive. A great choice to eat simple after having a heavy feast the day before. Once you have learnt to whip up this meal, it is almost impossible to unlearn.
