Healthy Milo Mug Cake
- 3 tbsp (15g) Quaker Instant Oatmeal
- 2 tbsp (10g) unsweetened milo powder
- ⅛ tsp baking powder
- 1/16 tsp salt
- ¼ tsp unsalted butter, melted
- 10 tsp nonfat milk
- ¼ tsp vanilla extract
- 1 tsp miniature chocolate chips, divided
1. Add the oats to a high-powered food processor or blender, and blend the oats until mostly fine and powdery, about 3-4 minutes. Sift the oat flour into a large bowl.
2. Lightly coat mug with some butter or with non-stick cooking spray.
3. Whisk together the oat flour, cocoa powder, baking powder, and salt in the large bowl.
4. In a separate bowl, stir together the butter and milk. Stir in the vanilla extract.
5. Gradually mix in the flour mixture, about 1 tablespoon at a time, until just incorporated.
6. Gently fold in chocolate chips with the mixture.
7. Microwave on MED Power 3 minutes. Let the mug cake cool for at least 4 minutes to allow the center to finish cooking through.
