Chinese Preserved Olive & Chicken Oats with Sunny-side Up Egg

Ingredients
Yield: 1 Portion
- 80g of chicken (skinless & sliced)
- 1 clove of garlic (chopped)
- 6 tbsp rolled oats
- 170 ml water
- 1 egg
- Pinch of black pepper
- 1/8 tsp of soy sauce
- 1 stalk spring onion (finely sliced)
- 3/4 tbsp of Chinese preserved olive
Procedure
- In a pan, add 1/4 tablespoon of oil and fry chicken along with the garlic for 2 minutes or until just cooked. Place this aside.
- Toast oats over medium high heat for approximately 3 minutes or until starting to brown and fragrant (this step is to increase the oats fragrance and prevent oats from getting mushy).
- Set oats aside and boil water.
- Once water boils, put oats in and stir continuously for 4-5 minutes, until all the liquid has been soaked up.
- Mix in chicken and place it into a serving bowl.
- Put 1/4 tablespoon of oil into a frying pan and fry 1 egg. Season with black pepper and place it on the oats once its cooked. Drizzle soy sauce on the egg.
- Finish with 3/4 tablespoon of chinese olive and sliced spring onion.
