Healthy Cinnamon Oatmeal Pancakes with Chia Berry Compote
Cinnamon Oatmeal Pancakes
- 2 eggs
- 2 large bananas
- 80g Quaker oats, ground
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
No-Added-Sugar Chia Berry Compote
- 350g frozen/fresh berrries
- 3 tbsp chia seeds
- *Optional: 1-4 tbsp honey/maple syrup/agave nectar to sweeten
1. Grind oats (rolled/instant) in a blended to make oat flour. (Tip: Make a big batch of oat flour and store for future use — it is versatile and a healthy, high-fibre alternative to wheat flour :)
2. Mash bananas, mix in eggs.
3. Add oat flour, cinnamon, baking powder and salt and mix to combine.
*thickness of batter may vary based on size of banana. Feel free to add more oat flour if batter seems too thin.
4. *Alternatively, blend all ingredients in a blender and your batter is ready!
5. Optional: Stir in blueberries/dark chocolate chips to the batter.
6. Heat up a nonstick pan (Low-medium heat) and cook pancakes on each side till nice & golden brown.
While waiting for the pancakes to cook, you can make your very own simple & healthy berry compote :)

1. Cook berries on stove till broken down and have it’s juices released.
2. Add chia seeds (and sweetener if using). Mix and cook on low heat for 5 minutes.
3. Allow berry compote to cool, it will thicken with time.
4. Serve on pancakes and enjoy!
Store in an airtight container, chilled for up to a week.
