Vegetarian stuffed mini sweet peppers with oat and tofu
Ingredients

Fillings:

  • 1 firm tofu
  • 2tbs oat (blue color quick cook oatmeal)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • Other seasonings like paprika etc (optional)

Other ingredients:

  • 3 mini sweet peppers (cut in half and take the seeds out)
  • 1 tbs olive oil to pan fry the fillings.

     

Topping: any type of cheese (pizza topping)

Procedure

1. Mash tofu and mix the rest of the ingredients for the fillings.

2. Add a bit of olive oil and pan fry until slightly brown colour. 

3. Stuff inside the mini peppers (already cut in half) and add cheese toppings.

4. Bake in the preheat oven 180 Celsius for about 10 mins. Sprinkle dry parsley for garnish.
