Cocoa Spiral Oat Steamed Bun
Ingredients

- 1/2 cup rolled oats

- 1 cup plain flour

- 1 tbsp sugar (or brown sugar)

- 1/2 tsp instant yeast

- 1/3 cup milk

- 1/3 cup vegetable oil

- 1/3 cup hot water

- 3 tbsp cocoa powder (dissolve it with 1 tbsp hot water)

Procedure

1. Soak oats in hot water for 5 minutes, stirring occasionally.

2. While soaking the oats, sift together plain flour, sugar and instant yeast in a mixing bowl, leaving a well in the middle.

3. Pour milk and vegetable oil into the well of dry ingredients. Combine and knead until incorporated.

4. Cover with plastic wrap. Let it rest for 15 minutes.

5. Punch down the dough. Divide the dough into two equal portions.

6. Add the cocoa to the first portion dough. Knead it for 5 minutes until the cocoa is well incorporated. Roll out the dough with a rolling pin to form a big rectangle (roughly half cm thin).

7. Knead the second portion for 5 minutes. Roll out the dough with a rolling pin to form a big rectangle (same size as the 1st rectangle).

8. Stack 2 rectangles on top of each other.  

9. Roll up the rectangles tightly (from bottom to top) to form a long log.

10. Cut into 6-8 equal portions using a serrated knife like a bread knife (for a nicer cut). Put each on a piece of parchment paper.

11. Bring the water in the steamer to a boil. Wrap the lid with a cloth.  

12. Turn off the heat and place the steamed buns inside the steamer for 2 minutes with the lid on.

13. Turn on medium heat and steam for 9 minutes.  

14. Turn off the heat and let them sit in the steamer for 10 minutes with the lid on.

15. After that remove and put on cooling rack. This will prevent the bottom of the steamed buns from getting soggy.
