Lemon Crinkle Oats Cookies
- ½ cups butter softened
- 1 cup fine sugar
- 1 tsp vanilla extract
- 1 whole egg
- 1 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
- A pinch of salt
- ¼ teaspoons baking powder
- ⅛ teaspoons baking soda
- 1 ½ cup all-purpose flour
- ½ cups powdered sugar
- 150g Quaker Oats
1. In a large bowl, cream butter and sugar together until light and fluffy. Whip in vanilla, egg, lemon zest and juice and mix them altogether.
2. Stir in the flour, salt, baking soda, and baking powder slowly until just combined. Pour in the oats and mix evenly.
3. Pour powdered sugar into a large bowl. Use a small ice cream scoop to scoop the dough. Roll the dough into a ball and roll then around in powdered sugar.
4. Preheat oven 300 degrees. Baked the cookies for 8-9 minutes or until bottoms begin to barely brown and cookies look matte.
