Lemon Oats Salad

Ingredients
Salad Components
- 12 tbsp Quaker rolled oats
- 200ml chicken stock
- 1/2 Japnese cucumber (diced)
- 100g cherry tomatoes (half)
- 2 chicken tenders
- Parsley for garnish
Dressing
- 1 lemon (juice)
- 3/4 tsp black pepper
- 3 tbsp olive oil
- 1 clove of garlic (grated)
- 1/4 tsp salt
- 3 tbsp honey
Procedure
- Toast oats until golden brown.
- Mix the dressing and set aside.
- When ready to eat, boil chicken stock and add oats into it. Cook for approximately 3 minutes until no stock is left.
- Meanwhile, put a teaspoon of oil in a pan and fry chicken tenders for 2 minutes on each side. Slice into bite size.
- Mix all the salad components together and dress accordingly.
- Plate in a bowl and garnish with a few leaves of parsley.
