Oaty Rock Buns
Ingredients
  • 220g Plain flour
  • 3tsp Baking powder
  • 110g Butter (cut into small cubes)
  • 2 eggs
  • 2Tbsp milk
  • 110g Mixed dried fruit
  • 100g Brown sugar
  • 30g Quaker whole rolled oats
Procedure

1.  Line flat baking pan with grease proof baking paper.  Set oven at 180C.

2.  Sieve flour and baking powder together into a large bowl.

3.  Rub in butter into mixture above until it resembles breadcrumbs.

4.  Add the sugar, dried fruit and rolled oats.

5.  Stir in the beaten eggs using a butter knife.

6.  Stir in the milk gradually.  The mixture should drop from the knife when shaken.

7.  Take up small portions of mixture between 2 forks.  Makes about 12 rock buns. 

8.  Bake for 12 – 15 mins till golden brown
