Pumpkin oats soup
Ingredients
  • 500g pumpkin cubes 
  • 1/4 cup instant oats
  • 1 1/2 cup chicken stock 
  • 1/2 cup water 
  • 1/4 cup whipped cream
  • 1 onion sliced
  • 2 cloves garlic 
  • 1 tsp turmeric powder or curry powder 
  • Some parsley chopped
  • Salt & black pepper 
Procedure

1)  Place all ingredients (EXCEPT whipped cream, salt & black pepper) into pot and boil for about 20 mins or till pumpkin softens.

2) Remove from heat and blend the soup till smooth.

3) Season with salt & black pepper. Stir in the cream.

4) Ladle the soup into a bowl, drizzle some cream, sprinkle some black pepper and parsley.
